Sushi Oke is a traditional Japanese wooden vessel used to prepare sushi rice and, on occasion, to serve sushi. Made from materials such as Kiso sawara (Japanese cypress), it offers excellent moisture regulation, helping the rice achieve the right consistency and texture. In addition to classic sushi oke, there are also versions made of plastic or lacquer (urushi, 漆). These are easier to clean, but they do not absorb moisture.
Alternative names include hangiri and handai.
