Kanji 飯台(はんだい)

Handai (飯台) is a traditional Japanese wooden vessel used to prepare and present rice dishes. Like the hangiri, it is made from Kiso sawara, a Japanese cypress. The handai is often used for chirashi sushi and other mixed rice dishes. In addition to preparing sushi rice, a handai can also serve as a serving bowl for various Japanese dishes. Its wooden construction helps regulate the rice’s temperature and absorb excess moisture.
