Matsumae sushi is a special type of sushi that originates from the Matsumae region in Hokkaido, Japan. This type of sushi is known for using locally available ingredients and its unique preparation method. The preparation typically involves the use of rice that is seasoned with a mixture of vinegar, sugar, and salt. A characteristic feature of matsumae sushi is the use of saba (mackerel). The preparation is mainly done in the form of rolls. The seasoned rice is placed on a piece of kombu and topped with ingredients. Then, everything is rolled together and cut into bite-sized pieces. Usually, no special press is used for shaping, as with battera sushi. Instead, the rice and ingredients are often shaped by hand.
