The oshi sushi bako is a traditional Japanese mold used for making pressed sushi, known as oshi sushi. This rectangular wooden box is used to press rice and various ingredients into shape to create even and compact sushi pieces.
The preparation of oshi sushi with an oshi sushi bako begins with the preparation of vinegared rice, which is seasoned with a mixture of vinegar, sugar, and salt. Fresh or marinated ingredients like mackerel fillets, shrimp, or vegetables are prepared. A piece of kombu (seaweed) can be placed at the bottom of the mold before adding the rice and ingredients. The layers of rice and ingredients are then firmly pressed with the lid of the box to achieve a compact, even shape. After the sushi has been pressed in the oshi sushi bako, it is carefully removed from the mold and cut into bite-sized pieces. This process gives the sushi a dense texture and keeps the ingredients firmly together.
Oshi sushi bako are available in various sizes and materials, traditionally made of wood. They are often used in the preparation of regional sushi specialties like battera sushi and are an essential part of western Japan's sushi culture. Modern alternatives to the oshi sushi bako can be made of plastic or other materials and are also easy to use.
