Chūzakana refers to fish of متوسط quality and price. In terms of flavor and cost, these fish fall between the categories of “lower-quality” (Gezakana) and “high-quality fish” (Jouzakana). Typical examples of Chūzakana include certain kinds of tuna and salmon, which are used frequently because they are widely available and popular.
