Jouzakana refers to fish regarded as being among the highest in quality and therefore relatively expensive. These fish are considered especially prized and are often used in Japanese cuisine for higher-priced dishes. Examples of Jouzakana include bluefin tuna and sea bream, which are highly regarded for their particularly fine flavor and texture.
