Sukeroku Sushi(sukerokuzushi)

Sukeroku sushi is a combination of two popular types of sushi: Inari Sushi and maki sushi. Inari sushi consists of sushi rice that is filled into a pouch of fried tofu (abura-age), while maki sushi is a roll of sushi rice and various fillings wrapped in nori (seaweed). For sukeroku sushi, the sushi rice is first cooked and seasoned with a mixture of rice vinegar, sugar, and salt. For inari sushi, the seasoned rice is filled into the prepared abura-age pouches. For maki sushi, the seasoned rice is spread on a nori sheet and topped with ingredients such as cucumbers, carrots, and tamagoyaki (Japanese omelet). The nori sheet is then rolled into a firm roll and cut into pieces.
The name sukeroku sushi is derived from a popular kabuki play called sukeroku yukari no edo zakura, which was performed during the Edo period. In this play, the main character Sukeroku wears a headband and a kimono belt, reminiscent of the shape and appearance of the sushi rolls and inari sushi.
