Otsukuri

おつくり

Kanji notation: お(つく)り、お(つく)

Otsukuri is a term from Japanese cuisine that describes an elaborate and artistic way of presenting sashimi. Unlike regular sashimi, which is often simply sliced and served, otsukuri places special emphasis on visual presentation and the arrangement of ingredients.

In the preparation of otsukuri, fresh fish fillets and seafood are carefully selected and artfully sliced into thin pieces. Special knife techniques are employed to optimally bring out the texture and flavor of the ingredients. The sliced pieces are often arranged together with decorative elements such as edible flowers, leaves, and finely cut vegetables to create an appealing overall appearance.

The term otsukuri is commonly used in upscale Japanese restaurants, where the presentation of dishes plays an equally important role as the taste. This artistic preparation is intended not only to stimulate the appetite, but also to provide an aesthetic experience that reflects the dining culture of Japan.
