The term Itte gaeshi refers to a specialized sushi preparation technique in which the sushi chef shapes and turns the nigiri with just one hand. This method requires the highest level of precision and dexterity, since it allows sushi to be made quickly and efficiently without compromising its shape or texture.

Itte gaeshi is composed of the Japanese words itte 一手, meaning “one hand,” and gaeshi 返し, meaning “turning” or “flipping.”

In addition to Itte gaeshi, sushi preparation includes other techniques such as Tate gaeshi, Kote gaeshi, and Honte gaeshi. Each of these methods offers a different approach to shaping sushi and requires specific hand movements to bring out flavor and aesthetics to their fullest.
