Hijiki

Hijiki is an edible brown algae that predominantly grows on the rocky coasts of Japan, Korea, and China. The scientific name of this algae is Sargassum fusiforme. It is traditionally dried and sold in thin, black strips that turn green to brown when soaked in water. Hijiki is frequently used in Japanese cuisine. It is rich in fiber and essential minerals such as calcium, iron, and magnesium. Typical dishes featuring hijiki include Hijiki salad, often mixed with carrots and soybeans, and as a vegetable side dish. Hijiki is also used as an ingredient in various traditional sushi variations, such as sasa sushi.
Hijiki is traditionally considered a healthy food and is believed to improve hair quality and extend lifespan. However, there are also discussions regarding the arsenic content in hijiki, and some health authorities recommend limited consumption.
