Furūtsusakana

Spelling フルーツ(ざかな)
Romanization furūtsusakana · also: furuutsu-sakana, furuutsu sakana, furūtsu-sakana

Furūtsu sakana refers to fish that have been fed with fruits or their extracts to enhance their flavor and reduce the fishy smell. This method was developed to improve the quality and taste of aquaculture products by feeding them with ingredients such as citrus fruits, grapes, or olives.

The term furūtsu sakana became popular after Kochi University in Japan developed the yuzu buri (柚子鰤) in 2007, a yellowtail that is fed with yuzu citrus fruits. This method was developed to mitigate the fishy smell and add a fresh, fruity flavor.

Furūtsu sakana is frequently used in high-end cuisine and sushi restaurants to provide guests with a unique taste experience. Examples include mikan buri (みかんブリ), yellowtail fed with mandarins, and kabosu hirame (かぼすヒラメ), flatfish fed with kabosu citrus fruits.
